There are right-handed and racemic forms in human and animal meat tissues, while left-handed forms are normal metabolites in mammals. The commercially available products, whether produced by fermentation or synthesis methods, are all exogenously synthesized. Due to the presence of hydroxyl and carboxyl groups in the molecule, this product has the functions of these two functional groups. It forms carboxylic acid esters with acid anhydrides, lactic acid esters with alcohols, and salts with sodium, calcium, and ferrous ions; Due to the presence of both hydroxyl and carboxyl groups in this product, it can undergo self esterification to form linear polyesters and even cyclic compounds, namely cyclic dimer lactide [2]. Under slow oxidation conditions, this product can generate pyruvic acid. When heated above 250 ℃, it breaks down and decomposes, producing acetaldehyde and releasing carbon dioxide and water. Reacting with ammonia or amines can generate lactamide. In addition to self esterification, the hydroxyl and carboxyl groups of this product can also participate in reactions simultaneously, such as reacting with aldehydes or ketones to form cyclic acetals. Sodium lactate is used in medicine to prevent acidosis. Iron lactate, calcium lactate, and other raw materials are used in the pharmaceutical industry. Ethyl lactate is a fragrance, butyl lactate is a good additive for paint, and it is also an important raw material for plasticizers and improvers in the plastic industry; Used as a rust remover in the electroplating industry.
