Tartaric acid, also known as 2,3-dihydroxysuccinic acid, dihydroxysuccinic acid, and gluconic acid, has three optical isomers due to the presence of two identical asymmetric carbon atoms in its molecule. Tartaric acid includes D-tartaric acid, L-tartaric acid, and DL tartaric acid. Tartaric acid is a colorless and transparent prismatic crystal or powder with a strong sour taste and a slight flavor. It is soluble in water and widely exists in various plants in the form of potassium or calcium salts in nature, with a higher content in grapes. Tartaric acid is made from yellow crystals deposited at the bottom of wine barrels during winemaking, hence it is called tartaric acid. Its acidity is about 1.3 times that of citric acid, and its use is similar to citric acid. It is easy to dissolve in water and is suitable for making carbonated beverages. Tartaric acid crystals contain 1 molecule of crystal water, odorless, stable in air, with an acidic taste and a threshold acidity of 0.0025%. The acidity intensity is about 1.2-1.3 times that of citric acid, and the taste is slightly astringent. When burned, there is a foul odor of roasted sugar, and it has a chelating effect on metal ions. 1g is approximately dissolved in 0.8mL of water (25 ℃), 0.5mL of boiling water, and 3mL of ethanol. The pH of a 0.3% aqueous solution is 2.4. DL tartaric acid is widely used as a food additive, vitamin C effervescent tablets, and a hydrochloric acid forming agent for organic alkali drugs. Tartaric acid can form acid salts and neutral salts with bases. For example, neutralize with potassium hydroxide to form potassium bitartrate. The latter can also be further processed into antimony potassium tartrate (i.e. tartaric acid) and potassium sodium tartrate. It can also be used to make salts such as sodium bitartrate, sodium tartrate, and ammonium tartrate. According to GB2760-86 regulations in our country, tartaric acid can be used as an acidic agent for food additives, for refreshing beverages, jams, beverages, fruit jelly, canned goods, and candies. Due to its low hygroscopicity and good stability, it is particularly suitable for fruit juice and solid beverages, and is also used as a food emulsifier, chelating agent, and antioxidant enhancer; Metal surface cleaning and polishing agents; Pharmaceutical raw materials, mordants, etc. Mostly used in combination with citric acid, malic acid, etc., limited to 2% (Japan) and 4% (United States) in desserts. It is commonly used to prepare beverages and other foods with grape flavor. Scope and dosage of use: Suitable for moderate use in various types of food according to production needs.
