Properties
White orthorhombic crystals or crystalline powder, odorless, with a sweet taste. Melting point is 92–96℃. Easily soluble in water (1.6g/mL), slightly soluble in ethanol. The pH value of a 10% aqueous solution is 5.0–7.0. It has a cool taste, and its sweetness is 40%–70% that of sucrose. It has good thermal stability.
Uses
It is a special sweetener with nutritional value, which can dissolve in water and absorb heat. When consumed, it has a cool taste, does not cause dental caries, and is also suitable for diabetics.
