Descripion: Pectin is a kind of natural macromolecule, which mainly exists in all higher plants and is an important component of plant cell interstitium. Pectin is deposited in the primary cell wall and intercellular layer. In the primary wall, pectin is cross-linked with microfilaments with different contents of cellulose, hemicellulose, lignin and some extensin, which makes all kinds of cell tissues hard and show inherent morphology, and serves as the supporting material of inner cells. It was first isolated and described by Henry Bracono in 1825.

Uses: Thickener; Gelling agent. Stabilizing agent; Emulsifier. Used in THE manufacture OF JAM, JELLY, mayonnaise, essential oil stabilizer, prevent pastry hardening, improve the quality of cheese, make juice powder, etc. High-ester pectin is mainly used in acidic jams, jellies, jelly gels, candy fillings and lactic acid bacteria drinks.
