Structural Characteristics
- L-Fructose and the common D-fructose are enantiomers of each other. Their molecular structures are mirror images of each other in space but cannot overlap completely. The configuration of the chiral center of L-fructose is opposite to that of D-fructose. This structural difference leads to certain differences in their biological activities and physicochemical properties.
Physicochemical Properties
