Details
Gellan gum is a high molecular linear polysaccharide. Heat and acid resistance, stability to enzymes. It is insoluble in non-polar organic solvents and cold water, but it can be dispersed in water with slight stirring, dissolved into transparent solution when heated, and formed transparent and solid gel after cooling. A low ionic strength solution that is soluble in hot deionized water or in the presence of an integrating agent, and the aqueous solution is neutral.
The gellan gum dry powder is almost white to light yellow in color, without special taste and odor, and decomposes at about 150 ℃ without melting.
Due to its natural extraction, low cost, and harmless to humans, gellan gum has gradually replaced the use of agar and carrageenan in developed countries.
