The stability of Nisin is also related to the PH value of the solution. If it is dissolved in skimmed milk with PH=6.5, the activity will only lose 15% after pasteurization at 85 ~C for 15 minutes. When it is dissolved in dilute hydrochloric acid with PH=3, the activity will remain 100% after high pressure sterilization at 121 ~C for 15 minutes. Bacteriostatic activity

Nisin can effectively inhibit many Gram-positive bacteria causing food spoilage, such as Lactobacillus, Leuconostoc, Micrococcus, Staphylococcus, Listeria, etc. Especially, Nisin has a strong inhibitory effect on spore-producing bacteria such as Bacillus and Clostridium. Generally, spore producing bacteria have strong heat resistance, such as instant sterilization of fresh milk at 135 ℃ for 2 seconds, the mortality of non spore bacteria is 100%, the mortality of spore bacteria is 90%, and 10% of spore bacteria can not be killed. Adding 0.03-0.05g/kg Nisin to fresh milk could inhibit spore germination and reproduction of Bacillus and Clostridium.
